Los Pilares, founded in 2010 in Julian, works with Katie Fawkesmoore, Coleman Cooney, Jay McCarthy, and Michael Christian. The program sources fruit from sustainable vineyards and orchards in San Diego County's backcountry and mountains. The cellar operates with minimalist winemaking. No added yeast, acids, enzymes, yeast food, tannins, oak, sulfur dioxide, or preservatives. Fresh grapes alone. The portfolio spans Sparkling Muscat, Grenache Rosé, a 50/50 Grenache and Carignane blend, and BPN, a sparkling red made from 100% Cabernet Sauvignon. Production and tasting happen in partnership with Charlie & Echo in San Diego.
