Hyperion Wines is a tiny boutique producer in the Matakana region making traditionally crafted wines from Chardonnay, Pinot Noir, Malbec, Cabernet Sauvignon, and Chambourcin. The winery operates out of a converted cow shed, which is peak charming. Note that they're currently under new ownership with the cellar door closed, so check ahead before visiting.
