The work centers on Sangiovese, with continuous study of soil and clonal selection, farmed organically. The Degustazione itinerante pairs four IGT and DOCG wines with crostini and extra virgin olive oil, fresh Tuscan bread. The Leggende dell'Aiola expands to five wines, local cured meats and cheeses. Group tastings add grappa and a light lunch option. Each experience runs roughly ninety minutes to two hours.
