Endless West, founded in 2015 in Detroit, applies molecular science to spirits production. Mardonn and Alec lead the program from a Detroit facility that operates without a tasting room. The work spans bulk spirits, packaged spirits, concentrates, and co-packing services. Glyph, a molecular spirit inspired by whiskey, exemplifies the approach. The process uses less water and land and leaves a smaller CO2 footprint than traditional methods.
