Domaine Guillemot Michel sits at Quintaine, between Viré and Clessé, in the Viré-Clessé appellation, one of three crus of the Mâconnais. Founded in 1985, the domain converted to biodynamic farming in 1991 and has held BIODYVIN certification since 2018. Sophie Roussille took over management in 2013, joining winemakers Gautier Roussille, Pierrette Guillemot, and Marc Guillemot. The program tends 6.5 hectares of old Chardonnay vines aged 55 to 60 years. Grapes are hand-harvested and gently pressed. Fermentations occur naturally in concrete vats using indigenous yeasts and bacteria.
