Kai and Kristina work steep vineyards in Kaub with 100% hand labor, harvesting by hand across the slopes. The program centers on Riesling and Pinot Noir alongside Cabernet Dorsa, Dakapo, and Helios. Pas de Chat blends 40% Pinot Noir, 40% Riesling, and 20% of the three remaining varietals. The Pirouette Riesling 2024 spends 18 months on fine wood, unfiltered and unrefined. An agroforestry system supported by myclimate foundation and SilvoCultura is part of the vineyard's work. A tasting room is available.
