Domaine Du Bollenberg-Clos Sainte Apolline has worked 25 hectares in Westhalten since 1947. The vineyard practices organic agriculture, with manual harvesting and fermentation in wooden vats. The program centers on Muscat and Gewurztraminer, including the Alsace Muscat Sélection Bio 2024 and Gewurztraminer Sélection 2024. The cellar also produces Vin de Glace, harvested when temperatures drop to minus seven degrees Celsius. Production yields range between 35 and 65 hectolitres per hectare. Beyond wine, the house makes 52 eaux-de-vie and liqueurs. A family-run restaurant sits on the property.
