Umbra Winery in Little Elm builds its program around Missouri varietals. Norton arrives dry and complex, layered with spice, vanilla, chocolate, and cherry. Chambourcin is smooth and semi-dry, medium-bodied with fruity tannins and light cherry. The house also works with Pink Catawba, Vidal Blanc, and Vignoles. Full Moon Red blends four red grapes into a full-bodied, semi-sweet wine with berry tones. Ruby Red, a lighter sweet blend of three, leans fruity. Super Pink Moon is a rosé from Pink Catawba, light and refreshing with strawberry notes. Harvest Moon, made from Vidal Blanc, is dry with crisp citrus and white peach. Vignoles offers semi-dry citrus with pineapple and apricot. Moonlight White blends three white grapes into something light and refreshing, with melon, apple, and apricot. The program includes a blackberry wine slushy and seasonal Warm Mulled Wine in limited quantities.
