Shadow Canyon Cellars sits at 1,600 feet in the York Mountain Viticulture Area, eight miles from the ocean. The vineyard plants Syrah across five different clones and Grenache on 1.5 acres of Alban material. Hand pruning and hand harvesting keep yields tight, around two tons per acre. Fruit moves through three sorting tables before fermentation in custom jacketed tanks, seven and a half feet wide and four and a half feet tall.
