About Sable Creek Winery
Bill Harris and Steven Harris founded Sable Creek in Plainfield in 2019, then relocated to a former Marquette Bank building in Romeoville in July 2024. The program sources grapes from California, Illinois, Michigan, Missouri, and New York, producing 50 wines across a portfolio that includes the 250 Anniversary Americas Blend, 100th Anniversary RT 66 White Blend, and Bourbon Barrel Aged Zinfandel in dry and semi-sweet styles. The Production Room is visible from the Tasting Room and Event Room where wine is bottled. A Cold Room holds wine in barrels, tanks, and bottles. Wine slushies arrive in single, layered, and flight formats.
Tasting Experiences
Harvest Tours
Observe the wine-making process firsthand during harvest season (mid-September through November) when grapes arrive from multiple states and the crushing and fermentation process begins.
Production Room Viewing
Watch wine being bottled from the visible Production Room on bottling days while enjoying a glass of wine.
Wine Tastings
Tastings available during normal winery hours in the Tasting Room with wine by the glass or bottle.
Wine Slushies
Refreshing wine slushies flavored by house wines, available as single, layered, or flight options with frequently changing flavors.
Special Events
Trivia nights, wine and cheese pairings, wine and chocolate pairings, workshops, and live music nights. Some require registration, music nights are walk-in.
Private Events
Event Room available for private parties and celebrations.
