About

Bill Harris and Steven Harris founded Sable Creek in Plainfield in 2019, then relocated to a former Marquette Bank building in Romeoville in July 2024. The program sources grapes from California, Illinois, Michigan, Missouri, and New York, producing 50 wines across a portfolio that includes the 250 Anniversary Americas Blend, 100th Anniversary RT 66 White Blend, and Bourbon Barrel Aged Zinfandel in dry and semi-sweet styles. The Production Room is visible from the Tasting Room and Event Room where wine is bottled. A Cold Room holds wine in barrels, tanks, and bottles. Wine slushies arrive in single, layered, and flight formats.
