Gilted Edge Winery opened in Newark, Illinois in 2019 as a family operation. The program centers on small batch production across red and white varietals, Cabernet Sauvignon, Merlot, Malbec, and Pinot Noir alongside Sauvignon Blanc, Gewurztraminer, and Pinot Grigio. The house has built partnerships with Driftless Glen Distillery in Baraboo, Wisconsin and Whiskey Acres Distillery in DeKalb, Illinois, collaborating on bourbon barrel aged wines. A Reserve Collection, available by reservation only, offers a private tasting experience. These wines are designed around Coco, the winery's horse.
