The winemaking at Quiet Corner Winery is led by I’m Dave Paine, founder and winemaker at Quiet Corner Winery. My journey into winemaking started simply—with friends, a few demijohns, shared meals, and a curiosity about how great wine is made. That curiosity eventually grew from small batches into barrels and tanks, and ultimately into Quiet Corner Winery on our historic 18th-century horse farm in Hampton, Connecticut. I consider myself an “unbound” winemaker. I don’t grow grapes or limit myself to a single vineyard or region. Instead, I source grapes and must from places such as California, Chile, Italy and South Africa, choosing regions where particular varietals thrive, then bring that fruit back to Connecticut to make the wine. To me, it’s no different than cooking a great meal, you start by finding the best ingredients you can and then respect them enough not to get in their way. My approach in the cellar is hands-on, small-batch and probably a little unconventional. I spend a lot of time tasting, experimenting, blending and making the small decisions that can completely change where a wine ends up. I’m not interested in following a formula; I want each wine to retain some of the character of where its grapes came from while still reflecting my own style as a winemaker. Ultimately, though, I make wine because I believe it brings people together. Some of my favorite moments aren't medals or bottles coming off the bottling line—they're sitting around a table, opening a bottle and watching the conversations and connections that happen around it.
