At the base of the West Elks Mountains in Paonia, Puesta del Sol sits at 5800 feet above sea level, among the highest elevation vineyards in the Northern Hemisphere. The property occupies one of only two AVAs in Colorado. The farm to table restaurant operates Wednesday through Saturday from 4pm to 8pm and Sunday mornings from 10am to 2pm, sourcing organic produce from the vineyard's own farm and working with local farmers and artisans.
