Founded in 2007 in Sighnaghi, Gurjaani Municipality, in Kakheti, Pheasant's Tears produces artisanal natural wines using ancient Georgian techniques, working with family winemakers who have made wine for eight generations. The producer specializes in rare endemic Georgian grape varieties, labeling wines from Chinuri, Kisi, Mtsvane, Rkatsiteli, Saperavi, Tavkveri, and Tsolikauri. The Sighnaghi property operates as both a winery and a restaurant, open daily from noon to 11pm.
