A fourth-generation farmer and conservationist named Denis Marshall runs this Central Otago winery, named after his ancestor William Swainson, a 19th-century naturalist whose bird drawings appear on every bottle. They make Pinot Noir, Pinot Gris, Riesling and Rosé with the intensity Central Otago is famous for. You can visit daily from 10am-6pm to taste and buy, alongside five other premium local producers.
