Walter Georis arrived in California from Belgium in 1956, eventually designing the acclaimed restaurant Casanova before purchasing a 14-acre ranch in Carmel Valley's mountains in 1981. After consulting with French experts on soil and winemaking, he established the vineyard on sandy clay loam with gravel, river rocks, and chalky soils. The tasting room, built in adobe style reminiscent of early California Mission architecture, features tall ceilings, a large fireplace, and hand-hewn oversized beams beneath antique handmade Spanish tiles. A decorative vineyard planted to Petrus Clone frames the space. Since 1982, the house has produced white wines including Pinot Grigio, Sauvignon Blanc, Chardonnay, and Rosé Les Abeilles, guided by a philosophy that respects European tradition while embracing California's generous climate. The work aims for complexity, elegance, and finesse. Open Wednesday through Sunday, noon to six.
