Heiligenstein, Alsace. The Dock family has worked this corner of the region since 1730, though the domaine itself began in 1972 when Paul Dock expanded the vineyard to 5 hectares. Today Patrick, Paul, and Robert Dock tend 8.5 hectares across the slopes. Hand-harvested grapes move through pneumatic presses that coax out aromas and complexity, then age primarily in oak. The portfolio spans Riesling, Gewürztraminer, Pinot Gris, Muscat, Pinot Blanc, and Sylvaner. Klevener de Heiligenstein, the house's signature, accounts for over a third of production.
