About the winery
Cormorant is a minimal intervention, native ferment winery founded by Charlie Gilmore in 2018, focusing on simplicity and organic vineyard-sourced wines. The winery produces unfined and unfiltered whites including Sauvignon Blanc, Grenache Blanc, Marsanne, and Chardonnay, along with a red wine blend. All wines are made without synthetic pesticides or fertilizers, using primarily seven-year-old French barrels and stainless steel drums.
