The program produces Seyval Blanc, Cabernet Franc, Cayuga White, Vidal Blanc, Melody, Noiret, and Oberlin Noir. Bella, made from estate-grown Seyval Blanc in the Hudson River Region, took Gold in 2022. Appleoosa, a blend from Pennings Orchards and Pennings Vineyards, won Gold at the 2025 Hudson Valley Wine & Spirits Competition. Gold Rush, bourbon barrel aged since 2021, earned Bronze in 2023. The 2025 releases include Jackalicious, an apple wine recipe from Jack Pennings Sr. that claimed Silver, and Naked Cowboy, a blush blend of Vidal Blanc and Cabernet Franc. Deep Roots is a red blend of Noiret, Cabernet Franc, and Oberlin Noir.
