About Cave de Bailly

Fifty meters below Saint-Bris-le-Vineux lies a stone quarry that has held wine since 1972. The galleries themselves date to the 12th century, when they were first excavated. Before becoming a cave, the quarry served as a mushroom farm until 1972. Its constant temperature and natural humidity made it ideal for wine. Hand-harvested grapes become Pinot Noir, Gamay, Chardonnay, and Aligoté here, along with Crémant de Bourgogne. Guided tours descend into the underground cellar.
