At the base of the West Elks Mountains in Paonia, Bethlehem Wine Cellars sits at 5,800 feet, among the highest elevation vineyards in the Northern Hemisphere. The vineyard occupies one of only two AVAs in Colorado. The farm to table restaurant sources organic produce from the property itself, partnering with local farmers and artisans. Open Wednesday through Saturday, 4pm to 8pm, and Sundays, 10am to 2pm.
