Giovanni Scarfone, trained in Agricultural Sciences, leads the work at Bonavita in Faro Superiore, the hills above Messina. Nearly three hectares, split across two parcels at 250 to 300 meters elevation, hold vines ranging from a decade old to over eighty years. Nerello Mascalese, Nerello Cappuccio, and Nocera grow under certified organic practice, defended with copper and sulfur alone. Manual harvest arrives between early and mid-October. In the cellar, long maceration on skins and extended aging without chemical additives define the house's approach. Yield stays around 60 quintals per hectare.
