Domaine Schmitt Jean-Paul in Scherwiller works exclusively on the Rittersberg, a south-south-east-facing slope at the foot of Ortenbourg castle where granite debris and up to 65% rocks define the soil. Jean-Paul Schmitt and Bernd Koppenhöfer, who joined in 2003, farm organically certified by Ecocert and biodynamically certified by Demeter since 2015. Grapes are harvested manually only, with yields kept to 40 hectoliters per hectare. The program centers on Riesling, Pinot Gris, Gewurztraminer, Pinot Noir, and Auxerrois. The tasting room sits across from Auberge de la Hühnelmühle.
