Thomas shapes the program at Schäfers Weingut in Hammelburg, where vines grow in the Hammelburger Trautlestal. The house works with Silvaner, Weißburgunder, Grauburgunder, and Domina. The Weißburgunder Kabinett is dry, open, fresh and structured. Barrel-aged Weißburgunder is concentrated and full-bodied, juicy on the palate. Grauburgunder 2022 carries ripe fruit and good structure. Domina 2023 is fruit-forward and intense, clean-toned and gripping, while the 2022 vintage displays smoky notes alongside concentration and grip. Frost-related harvest losses interrupted production four years prior, but the cellar has returned to full production. The Vinothek opens Wednesday through Friday afternoons and Saturday mornings.
