Johannes Zillinger works biodynamic vineyards in the Weinviertel, practicing organic and biodynamic farming for over 40 years. Sheep, chickens, and Kune Kune pigs graze among the vines, part of a biodiversity-focused approach certified by DEMETER. The portfolio splits across four lines. Velue draws from own vineyards, biodynamically farmed and minimalistically vinified. Parcellaire & Reflexion selects from the coolest, oldest parcels on lime-sandstone soils. Revolution employs a Solera system, PIWI vines, and short-time skin fermentation. Numen Fumé blanc ferments in amphoras, resting 16 months on lees without intervention. The varietals are Grüner Veltliner, Riesling, Sauvignon Blanc, and Muskateller.
