Varaison sits in Palisade, Colorado, a family operation committed to Old World style wines. The portfolio spans Chardonnay, Viognier, Mourvedre, Barbera, Nebbiolo, Merlot, Primitivo, Muscat Blanc, and Orange Muscat. Cuvée Blanc is un-oaked, made from hand-picked premium Chardonnay. Montagne Doux is a late harvest Viognier produced from hand-picked sustainable grapes. Joyeux is a single varietal Mourvedre French-style rosé. Bin 3115, 100% Merlot from the Grand Valley AVA and Palisade Vineyard, is barrel aged in French and American oak and fermented sur lees. Crème l'Orange 2020 is a field blend of estate-grown Orange Muscat and Chardonnay. The tasting room requires reservations and hosts private dinners for 4 to 12 guests in the historic dining room. Four-course gourmet wine-paired dinners run $99 per person. Five-course experiences are $125 per person.
