Simlinger sits in Droß, roughly 10 kilometers north of Krems an der Donau, where vineyards span the Kremstal and Kamptal regions. The program centers on white wines, fermented under controlled conditions and aged exclusively in steel tanks. Grüner Veltliner, Frühroter Veltliner, Müller Thurgau, Riesling, and Gelber Muskateller form the core. Reds spend at least one year in large or small wooden barrels. Hand-harvested grapes move through modern pressing equipment. The cellar, traditionally vaulted and set in the Langenloiser Kühsteingraben, anchors the work. Weisser Spritzer, a 50/50 blend of Grüner Veltliner and carbonated water in 0.33 liter bottles, offers a lighter option. Wine tastings and cellar tours are available by appointment.
