Seventh Son Vineyards sits in Wimberley, Texas, built from the place itself. The tasting room bar top is salvaged cypress from a tree downed in the Wimberley Memorial Day Flood. Cedar walls sourced from a local mill. Tables made from old box car floorings by a local artisan. The work here is unblended, single vintage wines from exclusively Texan varietals, across red, white, and rosé. Planting through harvest, sorting, smoking, and baking all happen in-house. Food pairings are made to order using locally sourced ingredients, matched to the program.
