Herbert and Birgit Schagl work the Thermenregion from Matzendorf-Hölles, where the cellar divides into two distinct programs. Whites ferment temperature-controlled in stainless steel. Reds move through open fermentation, then into large and small wood, with the finest aged in French oak. Green harvest selects only the best grapes. Canopy management stays airy and targeted, keeping chemical intervention minimal. The tasting room requires reservation and serves food, with outdoor seating available.
