Cumières, 3.5 km from Épernay in the Grande Vallée de la Marne. José Sanchez and Sébastien Sanchez work a vineyard that has operated as Récoltant-Manipulant for several generations, meaning they grow, produce, and bottle their own champagne. Manual riddling shapes every cuvée, from the Sélection Brut, an assemblage of Pinot Noir and Meunier aged three years, to the Grande Réserve, which adds Chardonnay and rests five years in oak. The Rosé de Saignée BIO draws from 100 percent Pinot Noir. Cuvée Flore stands alone as 100 percent Chardonnay Grand Cru, also aged five years. The Clos Saint Hélène Spécial Club is single-parcel Pinot Noir. The Cuvée Nature is Extra-Brut composed of 50 percent Pinot Noir, 30 percent Chardonnay aged in oak, and 20 percent Meunier. The Prestige Millésimé is an assemblage of Chardonnay and Pinot Noir aged at least five years.
