Boris Kovacic founded Projekt Wildtyp in 2021 after eighteen years as a researcher in stem cell and cancer work. The winery is located in St.Margarethen i.Burgenland, in the Leithaberg region. The program works with natural yeasts from the grapes themselves, and since vintage 2023, adds no sulfur in the cellar. Grüner Veltliner, Rivaner, Müller-Thurgau, Neuburger, and Blaufränkisch form the portfolio. Drangalo is a Grüner Veltliner cuvée with two days skin contact, aged fifteen months in steel. Lumpazi, a Rivaner, sees fourteen days on skins and eleven months in tank. Sprudla, a pétillant naturel made via Colfondo method, blends eighty-five percent Müller-Thurgau with fourteen days skin contact and fifteen percent unfermented Grüner Veltliner. Krawallo pairs fourteen months in used oak with six months in steel. Schlawina, a Neuburger, spends twenty-five months in used oak and glass carboy, then six months in tank. Gramuri, a whole-bunch Blaufränkisch with nineteen days skin contact, is blended from thirty-five percent new unoaked oak aged six months and sixty-five percent steel tank.
