Grandpa Bill bought a farm in the Dells in the early 1970s. Prairie Hawk Winery now works across wine, cider, and mead, building a portfolio that spans Chardonnay, Riesling, Sauvignon Blanc, Merlot, Grenache, and Cabernet Sauvignon. The Barrel Aged Chardonnay and Merlot rest in French oak. Cabernet Sauvignon ages a minimum of four months in French oak barrels. Seasonally, the house releases Wassail, a white wine and cider blend finished with fall spices, and Glugg, a red wine infused with cinnamon, ginger, cardamom and other spices. The program also includes Prairie Hawk Hard Cider, Strawberry Cider, Sweet Mead, and Lemon Twist mead. The tasting room opens May through October, Saturday and Sunday, Noon to 5 PM, with outdoor seating and a picnic area.
