Duane and Donna Patrick built Pollo Rosa from property to harvest over four years, establishing both vineyard and tasting room in Cleburne. The program produces Trebbiano, Sauvignon Blanc, Lenoir, Petite Syrah, and Pear wines, with a portfolio that ranges from Pink Chicken Wine and Pink FlaminGLO to Lenoir Rosé, Sunshine, Toes in the Sand, Janita, and PEARadise. The house hosts Theology Thursdays every other Thursday at 6:30 pm, teacher appreciation nights on Fridays with 15% off, and medical personnel appreciation every Sunday with 10% off. Duane has grown Christmas trees since 1997 at Sunset Hill Tree Farm, where they work with Texas heritage cultivars sourced from Texas A&M.
