Founded in 1768, Pierre Paillard is located in Bouzy, where brothers Antoine and Quentin Paillard, the eighth generation, work across the Montagne de Reims. The house controls 11 hectares spanning five Grand Cru sites and two Premier Cru parcels, each with its own named vineyard identity. Les Maillerettes, Les Mignottes, and Les Mottelettes anchor the Bouzy holdings. Since 2016, the program has operated under organic agriculture. Pinot Noir and Chardonnay form the portfolio. Visitors can book a tasting that includes the domain and chalk cellar for €90 per person for 1.5 hours, or a chef's table experience for €260 per person for 3.5 hours including a meal.
