Ryan Pease shapes the program at Paix Sur Terre on Vineyard Drive in Templeton, working with fruit from three distinct sites. Moonsprings Vineyard, planted in 2018 and 2019 at 1,500 feet in the Templeton Gap District, feeds the cellar alongside Maison Mason Vineyards, home to the only planting of Ugni Blanc on west Paso Robles, and Glenrose Vineyard, established in 1994 with some of the oldest Rhône plantings on the west side. Fruit is hand-picked in the middle of the night and processed first thing in the morning, moving through whole cluster fermentation with no chemical additives, sulfur, or fining agents. Aging happens in old neutral French oak. The tasting room opens onto a spacious patio and picnic area. A wine club offers small-production selections available only to members.
