About

Hillebrand works with Grüner Veltliner, Müller Thurgau, Chardonnay, and Weißburgunder across vineyard parcels where some Grüner Veltliner vines reach 30 to 40 years old. The house produces dried-grape wines including Strohwein. In 2004, they made their first Strohwein from Grüner Veltliner and Müller Thurgau, dried for six months and pressed in April 2005 at 36°KMW. A second vintage followed in 2006, yielding two separate pressings at different ripeness levels, the second named PRO ORGANO op. I in reference to the organ as the queen of instruments. Botrytis-affected Chardonnay and Weißburgunder from 2007 became Beerenauslese and Trockenbeerenauslese. The cellar maintains an archive for aged vintages.
