James Jelks founded Florez Wines in Watsonville in 2017, bringing training from UC Davis's enology and viticulture program to the cellar. The work sources fruit from organically farmed vineyards, some managed with dry farming. Native yeasts drive fermentation. No additives. No filtration. Élevage happens without sulfur, sur lie. Small production.
