Roger Sabon founded this domaine in 1952, assembling 50 hectares across four appellations. Eighteen hectares lie within Châteauneuf-du-Pape, fragmented across 14 separate plots, with another 12 in Lirac, 6 in Côtes-du-Rhône, and 14 classified as Vin de France. The work tilts decisively toward red. White grapes, which comprise around 5 percent of production, are hand harvested and lightly pressed. The Châteauneuf-du-Pape blanc ferments in 25 hectoliter wooden tanks. Reds follow different rhythms depending on appellation. Vin de France and Côtes-du-Rhône macerate for 15 to 20 days, while Lirac and Châteauneuf-du-Pape receive a full month. The Châteauneuf-du-Pape reds then age for 18 months.
