Mathilde Jaegler, an oenologist, founded Domaine Jaegler Mathilde in 2025 in Horbourg-Wihr. The house commands two Grand Cru vineyards. Hengst has south to south-east facing slopes with marly-calcareous-sandstone soil. Pfersigberg overlooks Eguisheim with marly-calcareous soil. Both sit among Husseren-les-Châteaux, Eguisheim, Wintzenheim, and Niedermorschwihr. The program spans Gewurztraminer, Riesling, Auxerrois, Pinot Noir, Pinot Gris, and Muscat. The portfolio includes Riesling Grand Cru Pfersigberg, Gewurztraminer Grand Cru Hengst, and L'éclosion Zéro.
