About Domaine Dujac

Jacques Seysses founded Domaine Dujac in Morey-Saint-Denis in 1968 with five hectares. The domaine has grown steadily, reaching 15.5 hectares by 2005, and acquired premier cru land in Puligny-Montrachet in 2014, including Folatières and Combettes. Jeremy Seysses joined in 1998, followed by Diana in 2001 and Alec in 2003. Organic experimentation began in 2001 on four hectares, extended across the entire domaine by 2008, and certified in 2011. Biodynamic practices arrived in 2003. The cellar works with whole-bunch fermentation, little or no destemming depending on vintage, and indigenous yeasts alone. Fermentation runs roughly two weeks. Wines age in oak barrels for fourteen to eighteen months, with oak purchased two years ahead to ensure proper drying. The portfolio centers on Pinot Noir and Chardonnay.
