About Ciento Cellars LLC
Ciento Cellars opens Friday through Sunday, 10am to 4pm, with indoor and outdoor tasting spaces in Paso Robles. The outdoor tables seat eight. Wine club members taste free and gain access to a fire pit and bocce ball court. The Primero Club receives three bottles each spring. Echalas and Founders clubs receive six and twelve bottles respectively, plus exclusive limited-release single varietal bottlings. The name draws from Spanish, blending cielo (heaven) and viento (wind), while also evoking one hundred. The third annual Winemaker Harvest Dinner is scheduled for October 17, 2026, pairing Chef Rachel Ponce's food with 2024 vintage wines for 64 guests.
Tasting Experiences
Indoor Tasting
Friday-Saturday-Sunday, 10:00am – 4:00pm. Tasting options include a sublime tasting table, comfortable living room and gorgeous bar with incredible views. Tasting fee of $35 per person is waived with purchase of two bottles.
Outdoor Tasting
Friday-Saturday-Sunday, 10:00am – 4:00pm. Taste current releases while enjoying jaw-dropping views. Outdoor tasting tables accommodate eight people. Tasting fee of $35 per person is waived with purchase of two bottles.
Harvest Dinner
Annual winemaker harvest dinner featuring passed hors d'oeuvres, dinner under the stars at the winemaker's residence, and wine pairings with Chef Rachel Ponce's culinary creations.
Wine Club
Members enjoy annual spring shipment, complimentary tastings, exclusive access to fire pit and bocce ball court, and invitations to First Taste dinner and Harvest Winemaker Dinner.
