Enrique Pallares and Felipe Pallares lead Casa Carmen in Baltimore, with production based in the Brandywine Valley in Chester County, Pennsylvania. The portfolio includes the 2025 Espumante, 2024 Gitano, and 2025 Rosé. The Rosé is crisp, dry, and fruity, with notes of strawberry and sour cherry. Tender is the Night is a barrel-aged black vermouth made from local grapes, natural herbs and spices, black walnuts from the farm, and Seville oranges. The Sun Also Rises is a white vermouth made with their wine, saffron, wild cardamom, wormwood, fresh Spanish oranges, and bitter Californian lemon. A tasting room and tapas bar are available.
