Austria's oldest winery, Nikolaihof operates 22 hectares across the Wachau, tending Riesling and Grüner Veltliner under strict Demeter biodynamic certification. No herbicides, pesticides, synthetic fertilizers, or sprays touch the vineyard. Christine Saahs, who has practiced biodynamic agriculture for over 45 years, leads the program. Wines age in a Roman cellar, resting in large old oak barrels for up to 20 years. The bio-certified wine tavern anchors the estate.
