A 14th-century bastide in Malataverne anchors this sprawling property. Twenty-one rooms and four suites sit within stone walls, while four hectares of grounds hold century-old olive trees, a 450-square-meter aromatic herb garden, and a 1,700-square-meter vegetable garden. Le Colombier restaurant, under Chef Director Johan Thyriot, holds one Michelin star and a 16/20 Gault & Millau rating, with three Écotable macarons. Bistrot 270 earned a Bib Gourmand award in the 2026 Michelin Guide. The wine cellar holds 850 references, drawing from the domain's own estate, Les Amoureuses, at Bourg-Saint-Andéol. A heated outdoor pool operates May through October at 28 degrees Celsius. Chef Baptiste Monet-Roussilon directs Le Comptoir du Colombier at the wine estate.
