Weingut Dillmann works twelve hectares across the Rheingau, from Assmannshausen to Winkel, without herbicides. Founded in 1980, the house is now shaped by Karlo, Marcel, and Marius. The program moves through three tiers. Gutsweine form the foundation. Lagenweine undergo spontaneous fermentation and rest at least six months on yeast, drawing from named sites like Höllenberg, Berg Rottland, and Kläuserweg. Réserven age twelve months in wooden barrels on yeast, then a further year in bottle before release. The portfolio spans Riesling and Spätburgunder alongside Sauvignon Blanc, Gelber Muskateller, Cabernet Sauvignon, Grauer Burgunder, and Weißer Burgunder. A new cellar building above Geisenheim houses the Vinothek and Strauswirtschaft.
