Christof Winkler-Hermaden tends vineyards on the slopes of two extinct volcanoes, Kapfensteiner Kogel and Klöcher Hochwarth, in Austria's Vulkanland Steiermark. The family-run winery practices organic-regenerative viticulture across St. Laurent, Pinot Noir, Souvignier Gris, and Riesling. The Souvignier Gris, a German crossing of Seyval Blanc and Zähringer, requires only three fungicide applications per season. The Riesling Grafenschätzchen vineyard, planted in 1994 on a south-facing slope, grows in volcanic soils. Wines age in stainless steel or barrels made from Kapfensteiner oak grown on the vineyard. The 2025 Rosé blends 80% St. Laurent with 20% Pinot Noir.
