In the winery, we take a minimal intervention approach, letting the fruit and the land speak. We use wild fermentation, relying solely on native yeasts present on the grape skins and in the winery environment. These native yeasts are unique to our vineyard, bringing complexity and individuality to our wines. We avoid additives, fining and filtration, in order to preserve the texture and integrity of the wine. Each vintage is a true expression of the season, the site and the natural energy that shapes it. In the cooler southern part of the region lies Rosa Glen, where our vineyard is located.
