On the Prellwitz family farm in Ripon, Vines & Rushes grows cold-hardy Wisconsin grapes capable of surviving the state's frigid winters. The winery fires Neapolitan pizzas in a wood-burning brick oven, reaching 850° with a bake time around 90 seconds. Dough and sauces are made in-house, paired with ingredients from local farms and cheeses from local creameries.
