The program centers on small-batch Malbec in red and rosé, alongside premium Viognier sourced from organic vineyards in Red Hills AVA, Lake County. Regenerative agriculture practices include cover crops of clover that enrich soil with nitrogen and organic matter, water conservation, and pollution prevention. The rosé and Viognier bottle after four to six months. Malbec takes two years in new and neutral oak, moving through malolactic fermentation after primary fermentation completes.
