At Tarpon Springs Castle Winery, those techniques inform a program built on Cabernet Sauvignon, Merlot, Pinot Noir, and Sangiovese, with Castillo Rojo anchoring the portfolio. The tasting room at 320 Tarpon Ave. opens Wednesday through Saturday, 11 a.m. to 6 p.m., where food accompanies the wines. The house claims to be the only European winery east of the Mississippi and the only one producing wines without chemical additives.
